build_oai -I install a lot of unnecessary dependencies for production builds

I noticed that when running ./build_oai -I on a headless machine a lot of dependencies (3-5GB) will be installed. Among these I've found Xorg, latex, mariadb and other things that I suppose are not needed for a production build, but only for certain feature in a develop environment.

Would it be possible to have a minimal install option?
