use smf_info in example configurations

Changes

• Add smf_info everywhere, necessary for tutorials of oai-cn5g-smf!216 (merged)
• Add anchors to simplify YAML config

Note: Anchors are not mandatory and users could just define SST and SD if they want, but it makes life easier. Also, IDEs and linters check if the anchors are correct
